Food: Fall Vegetable Soup

First soup of the seasonNow with the kitchen complete and the feel of fall in the air, it is time to make the first vegetable soup of the season! After a trip to the grocery store and a shopping bag full of vegetable goodness, the vegetables found themselves in a pot of broth to simmer  for about 2 hours! The boat smelled amazing by the end and the soup was amazing served with some crusty bread.

I think this was basically what we put in our soup:

 

  • 1 yellow onion
  • 2 gloves garlic
  • 2 carrots
  • 2 sticks of celery
  • 2 potatoes
  • 6 baby corn
  • handful of french cut beans
  • 12 brussel spouts
  • Cut up all the ingredients into chunks, saute in olive oil for a few minutes, add broth and simmer until all the vegetables are soft!
